Indian free style cooking

After a nice vigorous workout, I decided to cook up some Indian "style" recipes for dinner.

I made my version of a few of my favorite dishes.

The first is cauliflower with sweet potatoes, onions and spices. The second is spinach, chickpea and tofu.

Delish!

Cauliflower and sweet potato curry
  • One head of cauliflower, cut into florets and thoroughly washed
  • 1 small onion, finely chopped
  • 1 large sweet potato, cubed
  • 1 tbsp madras curry powder
  • 1 tbsp turmeric powder
  • 1 tsp garlic powder
  • 1 tbsp garam Marsala powder
  • 1 tsp chili powder
  • 1 tsp cumin seeds
  • 1 pinch nigella seeds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • water
Heat up the olive oil in a deep wide skillet. Cook the onion until translucent. Add in all the spices and cook for a minute. Stir in the cauliflower and potatoes to coat with spices and onions. Add a bit of water if the skillet looks a little dry. Cover and cook until soft.


Chickpea, tofu and spinach curry
  • 1 pack of cubed firm tofu
  • 1 bag of spinach, rinsed and dried
  • 1 can chickpeas, drained
  • 1 onion finely chopped
  • 2 cloves garlic - crushed
  • 1 tbsp madras curry powder
  • 1 tbsp crushed cumin seed
  • 1 tbsp olive oil
Heat up olive oil in a deep wide skillet. Sweat onions until translucent. Add in spices and garlic and stir for 1 minute. Add in chickpea and tofu. Coat with spices and cook until heated through. Add in spinach and cook until wilted and well combined.

Serve with naan or pita bread. Enjoy!
