Broccoli and 7 Grain Soup

I bought an inordinate amount of broccoli last week at Costco and ended up eating just 1/6 of the huge bag in my lunches and dinners.

I didn't want the rest of the bag to go to waste so I made this large soup recipe. It doesn't look very nice in the brown broth, but the taste is amazing

You'll need:

-2 medium onions, diced
-2 tbsp olive oil or avocado oil
-2 carrots, diced
-1 parsnip, diced
-2 celery stalks, diced
-12-16 cups of broccoli florets
-4.5 liters of beef stock
-1 cup of 7 grain mix or brown rice, pot barley, millet, kamut, etc.
-1 tbsp mustard seeds
-1tbsp ground curry powder
-1 tsp of cumin seeds
-1 tsp of coriander seeds
-1 tsp of nigella seeds
-1 tsp of whole peppercorns
-8 cloves of garlic, mashed with a mortal and pestle in 1 tbsp of salt
-tamari to taste

In a large pot, heat the oil and stir in seeds and spices except the garlic. Stir until the seeds start popping. Add the onion and cook until translucent. Add the carrots, celery and parsnips. Stir for about 2 minutes. Add in the grains, and broccoli. Cover with stock. Add in mashed garlic. Bring to a boil and simmer for 1 hour. Taste and add tamari for extra saltyness. Can be served with melted parmesan cheese. Delicious with a baguette.
