Slow Cooked Pork Loin Beer Stew

I made this recipe with what I had on hand in my cupboard. It made for an amazing stew that served 4.

You'll need:
  • One whole pork loin, cut into 1' cubes
  • 1 leek, washed and thinly sliced
  • 1 pound of mixed small potatoes, washed, and halved
  • 2 carrots, peeled and sliced into 1cm thickness
  • 1 celery stack, sliced into 1cm thickness
  • 2 green bell peppers - seeded and chopped into 1'' squares
  • 1 tablespoon 5 whole pepper grains mix (white, red, pink, black and juniper berries)
  • 1 bottle of budlight - any blonde beer would work
  • 1 liter of chicken broth - I used the organic kind
  • 1 tablespoon dijon mustard
  • 2 garlic cloves, crushed
  • 1 pinch salt
  • 1 bay leaf

Place all the ingredients in the slow cooker, and cook on low for 8-10 hours. Serve with bread in soup bowls. Amazing.
