I tried this soup today. Its very hearthy, warming and vegetarian, dare I say even Vegan friendly.
For this recipe you'll need:
-1 cup dried lentils (green or brown, washed and sorted)
-8 cups stock
-1 bay leaf
-olive oil about 2 tablespoons
-1 stick of celery diced
-2 medium carrots, peeled and diced
-1 medium zucchini, washed and diced
-1 tsp each: coriander seeds and cumin seeds dry roasted to release aroma
-1 medium onion: diced
-1 clove of garlic: grated
-1 tablespoon grated ginger
-1 can of diced tomatoes and its liquid.
In a large dutch oven, heat oil and stir in onion an seeds and cook on medium heat until translucent. Add in the garlic and ginger, and cook for 2 minutes. Add in the vegetables and cook for another 10 minutes until soft and coated. Add in stock and lentils. Bring to boil and simmer for 30 minutes. Once lentils are soft, add in the tomatoes and heat through.
