Brown Rice Pudding

  • 1 - 2 cups of left over cooked brown rice
  • 2 cups milk (I used soy)
  • handful of raisins
  • pinch of cinnamon
  • pinch of ground cardamon
  • pinch of nutmeg
  • 1/8 cup sugar
  • 1/4 cup honey

Combine all in a pot and bring to boil while stirring constantly. Simmer until most of the liquid has evaporated and rice begins to stick to bottom of pan. Let cool, and refrigerate.
